Sous Chef - Restaurant
Ancoats - Manchester
Salary up to £32,000pa
Our client is an industrial restaurant and wine bar ran by a group of friends, who are passionate about delivering something unique and different. Offering their clients, a mix of delicious small plates which are paired with stunning wines - They have even grabbed the attention of food critic Jay Rayner for being fantastic!
They are now looking for a Sous Chef to join the team, working alongside the head chef to ensure the running of service is perfectly executed. A great opportunity to work alongside the head chef and bring your creativity to develop new and exciting menus that will see their clients return time and time again.
As Sous Chef your responsibilities will be:
- Maintaining quality and standards set by the head chef
- Assisting the head chef with menu development
- Executing high standards of preparation and presentation
- Training and supervising kitchen staff to meet the standards required by the restaurant.
- Leading staff meetings
- Ensuring a high standard of hygiene and Health & Safety
- Ensuring correct close down procedures and maintaining an organised and clean workspace during service
- Estimating and managing the daily production and placing orders
- Conduction Quality checks on incoming deliveries
- Observing and documenting wastage
- Organising and maintaining kitchen storage
Skills Required:
- A clear passion for hospitality and cooking in particular
- Technical skills and cooking techniques - including knowing how to cook, store and serve food.
- Must have good communication skills with other team members
- Attention to detail to ensure consistent, high standards.
- Knowledge of food hygiene and health and safety.
- Handling and storage of ingredients and stock rotation.
- Oversees and organises kitchen stock and ingredients.
They have a fantastic tronc system in place. The restaurant is closed Sundays and Mondays and they also close the restaurant for a week over the Christmas period in recognition of working hard during the festive season, to ensure you have quality time with friends and family!!
